The General Counter-Spell, cast as Finite or Finite Incantatem, shuts down the effects of a spell already in progress. Hogwarts teaches it in second-year and third-year Charms, and Miranda Goshawk covers it in The Standard Book of Spells, Grade 2. It does not answer everything: some jinxes, the Jelly-Legs Curse among them, call for their own particular counter-jinx instead.
